This Honey Balsamic Chicken is a delightful combination of sweet and tangy flavors, perfectly complemented by crispy roasted broccoli and potatoes. A quick and easy weeknight dinner that's both healthy and satisfying.

Preheat oven to 425°F (220°C). Toss potato wedges on one side of a baking sheet with vegetable oil, salt, and pepper. Roast on the top rack for 5 minutes.
While the potatoes roast, cut broccoli into bite-size florets. Mince the garlic. Combine olive oil with half the garlic in a small bowl and microwave until sizzling, about 30 seconds.
Remove the sheet from the oven. Add broccoli to the empty side and toss with garlic oil, salt, and pepper. Continue roasting until golden and crispy, 15–20 minutes more.
Pat the protein dry and season all over with salt and pepper. Heat vegetable oil in a large pan over medium-high heat. Cook until browned and cooked through, 5–6 minutes per side. Set aside to rest.
In the same pan, add the remaining garlic and cook 30 seconds. Stir in the balsamic vinegar, honey, and chicken stock. Simmer until the glaze is thick and glossy, 2–3 minutes. Off heat, stir in the butter. Season with salt and pepper.
Slice the protein, arrange over roasted vegetables, and drizzle the glaze over everything. Serve immediately.
Pat the chicken dry before seasoning — this ensures a proper sear and prevents steaming in the pan.
Start the broccoli 10 minutes after the potatoes so both finish at the same time — broccoli needs far less time to crisp up.
Use a good balsamic vinegar (aged if possible) — the glaze is the hero of this dish and cheap vinegar turns bitter when reduced.
