Icelandic lamb tastes different, and the reason starts with how the animals actually live. Each summer, sheep are released into the highlands and unfenced countryside to graze freely across moss, wild herbs, berries, and grasses that grow nowhere else in quite the same combination. There's no feedlot, no grain-heavy diet, and very little human intervention until autumn. The sheep simply roam, and their diet shifts with whatever the land offers through the summer months.
That grazing pattern is the single biggest reason Icelandic lamb has a distinct flavor: earthier and more herbaceous than grain-finished lamb, with less of the heavy, fatty gaminess some people associate with lamb elsewhere. The meat tends to be leaner too, a direct result of a summer spent walking hilly, open terrain rather than standing in a pen.
Iceland's isolation, usually framed as a logistical headache, works in the sheep's favor. Strict biosecurity rules control the import of livestock, which has helped keep Icelandic sheep flocks free of many diseases common in more densely farmed regions elsewhere. That, in turn, means lamb here is typically raised without the routine antibiotic use associated with more intensive farming systems. It's not a marketing claim so much as a side effect of geography: an island nation with tight livestock controls simply doesn't need to lean on the same tools as more crowded farming regions.
The breed itself matters too. Icelandic sheep descend largely from the animals brought over by Norse settlers more than a thousand years ago, relatively unchanged and adapted specifically to Iceland's climate and terrain — hardy, efficient grazers rather than a breed optimized purely for size.
Because the sheep roam freely and unfenced all summer, getting them home again is its own event. Every September, farmers and volunteers — often entire communities, including plenty of city dwellers who come out just for the occasion — head into the highlands for réttir, the sheep round-up. Sheep are gathered from the open countryside and driven into large communal sorting pens, where owners identify and separate their own animals by ear markings before taking them home for the winter.
Réttir isn't purely functional; it's also a genuine social occasion, often followed by food, coffee, and sometimes a bit of brennivín passed around the pen. It marks the turn of the season as clearly as any date on the calendar, and it's the point at which that summer of wild grazing turns into the year's lamb.
